Steamblend FRX-180 | Light and airy creams by micro-blending frozen foods
• With the Neumärker Steamblend, pre-portioned food preparations are micro-pureed directly from the freezer under pressure, without having to thaw them beforehand.
• The frozen food is milled off in fine layers and mixed into a loose cream, while air is added at a pressure of 0.5 bar.
• The resulting cream can then be served, heated, or further processed.
• This allows you to prepare fresh ice creams and sorbets, light and airy mousses and creams, soups, forcemeats and fillings, or even cocktails in a very short time.
Use of the micro-blender:
1. Preparation: The fresh ingredients are placed in suitable portion cups and topped up with liquid of your choice (e.g. fruit with fruit juice, fish or meat with cream for a forcemeat, vegetables with bouillon for fine cream soups)
2. Freezing: The pre-portioned cups are frozen at -20°C. The portion cups can then be stacked in the freezer to save space.
3. Micro-pureeing: If required, the portion cups are prepared à la minute in the Neumärker Steamblend.
• Processing ready-to-serve, frozen portion sizes ensures consistently fresh ingredients.
• Micro-pureeing creates particularly creamy, delicate and airy textures with volume
• Ice cream and sorbets are at the ideal serving temperature after preparation in the Steamblend.
• Salmon forcemeat or poultry forcemeat is pureed to a uniquely fine consistency
• Fresh herbs can be used to prepare particularly intense forcemes and soups.
• Micro-pureing frozen ingredients preserves the natural aromas, reveals them as a fine mousse, and intensifies the taste experience.
• The natural, fresh colors and nutrients of the food are preserved during preparation.
• The principle of micro-pureeing frozen ingredients was initially used primarily by top chefs in haute cuisine, but is now a method employed in many ambitious restaurant kitchens. Steamblend is particularly useful in molecular gastronomy.
• The Neumärker Steamblend increases flexibility in professional kitchens: The frozen preparations are always available and can be used directly for service or mise en place.
• Optimal cost efficiency in the kitchen and complete utilization of purchased ingredients:
1. Vegetable stalks or fruit peels can also be used in a micro-pureed form.
2. The fresh ingredients are immediately frozen.
3. Only the necessary ingredients are prepared in portions.
• The ingredients, frozen in individual portion cups, ensure particularly hygienic storage and an uninterrupted cold chain when removing individual portions.
• 2 speed settings: 2 minutes (Start) or 1 minute (Fast) for micro-pureeing a portion cup, depending on the preparation and desired consistency
• With quick cleaning function for interim cleaning of the blades
• Maximum fill level of the portion cups with ingredients before blending: 150 ml. Total volume 300 ml (approx. 72 x 72 x 95 mm)
