Baking in the "OPALE" pizza oven is achieved through top-down radiant heating thanks to Incoloy stainless steel, which heats both the product and the base plate. The base plate's heating elements are rarely used, only when, after several batches, the moisture from the pizza cools the clay base. In this way, the heating elements can be activated by the control unit without interrupting production, reaching initial efficiency within a few minutes. The clay base plate is versatile: it can bake pizzas on a peel, meter-long pizzas, pizzas on trays, and bread. On average, the oven can reach an operating temperature of 470°C in approximately 1.5 hours and can reach a maximum temperature of 520°C.
